Zucchini Beef Bake
Ingredients:
3 T olive oil
3 lbs sliced zucchini (you can use more or less if you like)
1/3 c chopped onion
2 T (1 1/2 pkg if you use prepackaged) of Italian Seasoning
1 3/4 c water
1 T oil
6 oz tomato paste
1/4 c parmesan cheese
1/3 c bread crumbs (plain or seasoned)
8 oz mozzarella cheese (you can substitute cheese curds if you like)
1 lb ground beef
Directions:
Preheat oven to 350 degrees
Combine 3 T olive oil, zucchini and onion and sauté until tender
Place sautéed vegetables in a 2 quart casserole and brown the beef in the same pan used to sauté the veggies.
Drain the beef and add the Italian seasoning, water, tomato sauce, and 1 T olive oil.
Heat to a boil then reduce th heat and zimmer for 10 min. Pour over zucchini.
Mix parmesan and bread crumbs. Sprinkle over the top of the casserole and mix gently. Top with mozzarella and bake until golden brown. Usually about 15-20 minutes.
