Street Corn Salad
Have you ever had something and thought “O.M.G. those flavors are on fire!!!” This salad is that for me. It’s the perfect combination of spice, creamy goodness, and a little tang.
Ingredients:
4 ears of corn (the fresher the better), husked and kernels cut from the cob
2 T olive oil
1 jalapeno, seeded and finely diced
½ C fresh cilantro, washed and chopped
1 small red onion, finely diced (you can sub a white or yellow onion, but the red really gives it the best flavor)
⅛-¼ C feta cheese
Sauce:
2 ½ T mayo (full fat is really amazing)
1 clove garlic, minced
Juice of one small lime (or ½ of a med lime) Feel free to play with this measurement
⅛-½ t cayenne pepper (we like it spicy so we go for the ½ t)
Directions:
Heat a heavy pan over medium/high heat. Add oil and let it heat up, then add the corn kernels.
Cook until slightly charred 5-10minutes, and be careful because some kernels may start popping.
Remove from the heat and allow to cool while you mix up all the ingredients for the sauce.
When the kernels have cooled, pour them into a bowl along with the sauce and the rest of the ingredients. Gently stir to combine all the ingredients. I usually put mine in the fridge and let the flavors meld and serve cold. But you can serve warm or cold. You may need to add salt. Our feta is on the saltier side so we don’t generally need extra.
